avender Souffle


The soft and tasty
lavender souffle is a delight
for you to balance emotion.


Step 1: Basic Roux

Ingredients:
2 yolks
60g sugar
30g flour
250ml milk

Preparation:


1. Mix and whisk the yolks, sugar, flour and 50ml milk.
2. Boil 200ml milk. Set aside. Add the roux into the milk and mix.
3. Set aside to cool. Put the overall mixture in fridge for 2 hours.


 
Step 2: Souffle

Ingredients:
1 teaspoon basic roux
1 yolk
2 egg whites
15g sugar
1 1/2 teaspoon lavender
 

Preparation:

1. Mix the yolk, lavender and basic roux and whisk well.
2. Add sugar into the egg whites until the mixture becomes bubble-like.
3. Add the mixture into the basic roux and whisk. Place the mixture into souffle cups with butter and sugar. Bake for 10 minutes in a 200¢J oven. Serve immediately.
